Healthy Frittata

I love frittata.  

  1. It’s easy and typically the ingredients are things I already have and it’s great in a pinch.
  2. This works for breakfast, brunch, lunch or dinner.  

You can make a million different versions of this dish depending on what you have in your fridge.  Serve with fresh fruit or a salad and DONE. I typically make this before anyone is out of bed and leave it on the counter for an easy breakfast when we are on vacation.  Also, if you do not have a large cast iron skillet, get one. The one I have is 75 years old and is my favorite pan of all time. 

Also, the difference between frittata and quiche?  They are about the same. Quiches tend to have more milk or cream and also have a pastry crust.

Healthy Frittata With Potato Crust

Ingredients
  

  • 3 baking or sweet potatoes sliced
  • ½ yellow or vidalia onion chopped
  • Bacon sausage, or ham, chopped
  • Shredded cheese of your choice: I like Swiss or sharp Cheddar
  • 8 eggs
  • ½ cup of milk or heavy cream
  • Sauteed vegetables of your choice my fave: mushrooms and cherry tomatoes...but use what you have!
  • Fresh herbs of your choice for the top

Instructions
 

  • Rub a little olive oil around a large cast iron skillet just to coat. (you can also use a large pie pan)
  • Line the pan with the potatoes, being sure to put some around the edges to make a “crust”. You can overlap them here and there, just be sure they are not too thick or they won’t get crispy. Bake the potato-lined pan for 20 minutes at 350.
  • Meanwhile, saute onion and veggies of choice in a little butter until soft.
  • In a large bowl beat the eggs, then add the cheese, milk (or half and half), and veggies. Season with salt and pepper.
  • Remove the skillet and dump the egg mixture in. Top with fresh herbs and a bit of cheese. Return to the oven and bake for 40-50 minutes, or until the egg mixture is not runny.
  • Cool, slice and serve.
